Fun looking recipe for Thanksgiving from Cakes For Occasions – found in the Newburyport Current:
2 eggs
2 cups brown sugar
1 cup oil
1 t cinnamon
1 t ginger
1 t cloves
1 t salt
1 t baking soda
1 t vanilla
2 cups canned pumpkin
2 cups flour
Beat the eggs, brown sugar, and oil together until smooth. Combine all dry ingredients an set aside. Add pumpkin to egg mixture and then add dry ingredients until incorporated. Do not over mix.
Bake at 350 degrees for 12 minutes. Doesn’t say how to make them round – whoopie pie mold??? Cool. Fill with filling.
Filling
2 egg whites
2 T vanilla
4 T flour
4 T milk
4 cups confectioners’ sugar
1.5 cups shortening
Cream egg whites, vanilla, flour, milk and 2 cups of confectioners’ sugar. Mix, then add remaining confectioners’ sugar and shortening. Mix until incorporated.
May try to find another filling recipe with no raw egg whites…
